ZUCCHINI CUSTARD

Parboil sliced zucchini – enough to layer in a casserole

2 egss
1 ½ C whipping cream
¼ C melted butter
Combine and pour over zucchini

Sprinkle with
½ C parmesan
S & P

Dot with butter and bake 20min at 400F

ZUCCHINI/TOMATOE/ONION BAKE

Layer first tomatoe, then zucchini, then onion slices – salt and pepper each layer - in a casserole, repeat the layers ending with tomatoe. Top with grated cheese, cheddar or jack and bake until soft.

GRAMMIES DEEP FRIED ZUCCHINI

Cut 1/2 “thick rounds or sticks, sprinkle with S & P, roll in flour, dip in 2 eggs beaten with 1/4 C milk then into cracker or bread crumbs. Place on a waxed paper lined cookie sheet and chill. At serving time deep fry until golden and serve with some dipping sauce!
